Lemon Poppyseed Blueberry Muffins

Lemon Poppyseed Blueberry Muffins.............YUM!


For breakfast this morning I baked these little gems. I cannot rave about them enough. The fresh flavor of lemon and blueberry is unbeatable.
It is so zesty and sweet at the same time. I have been drooling over the rest of the left over muffins all day long! I may need to hide them from myself...... Yes, yes I think I will.
I have had lots of fun making many things out of the fresh Blueberries from my Muir Fresh Harvest Bundle this week. They are so flavorful and perfect. I am a big fan of baking and berries, but to tell you the truth, I have not spent a ton of time putting those two elements together. I am loving it. I will bake these again. I added blueberries and the juice from an extra lemon to Dorie Greenspan's Lemon Poppyseed Muffin recipe. It turned out so moist and soft. It has a good density to the muffin because of the Sour Cream in the recipe, but I only used low fat sour cream, to stay on the healthier side.
You should definitely give these babies a shot. They will not disappoint!

On another note, don't you just love my new fabulous plate? I have been eyeing these for a while now, and absolutely HAD TO HAVE THEM!!! They are my favorite plates I think I have ever seen. There are also plates with blooms and butterflies on them that go with the set. They are my dream plates. I am so happy they belong in my kitchen now! Yeah! Just had to give a little shout out to my little lovelies!
We may now move on.


I didn't get a photo of the final product, but the color of my veggies is to die for, so I wanted to share the beauty with you. I made these along with a roasted chicken, parmesan cheese polenta, and a toss salad. It was quite the treat. It was my first time making polenta, and at first I wasn't sure what I thought of it, but now that I have had time to mull it over, I really like it. I think I made it a little thicker than I will next time however. The roasted veggies were so flavorful and earthy. I adored the purple potatoes with parsnips, carrots and acorn squash. The flavors married so well, and were very complimentary to each other. Here is the link to the Roasted Veggies and Creamy Polenta recipe.

  1. I just made the lemon, blueberry, poppyseed muffins. They are the best home maid muffins I have ever made. Next time I will add juice from one more lemon like you did. They were soooo good.
