Warm Winter Apple Crepes!

This morning I made some fabulous warm winter crepes. These are a variation off of my original crepes. They have cinnamon, nutmeg and a little baking soda in them to fluff them up a little. 
I topped them with cinnamon caramelized apples that were to die for. Not to discount the dollop of whipped cream with nutmeg on top!

He was loving them as was I. Even my daughter was into them!

This was an easy yet scrumptious Sunday breakfast that I would definitely make again.
Here is the recipe:

Warm Winter Crepes with Caramelized Apples



Ingredients for crepes:
1 cup flour
1/4 cup sugar
1/2 tsp. salt
3 eggs slightly beaten
1/2 tsp baking soda
1 cup milk
1 tbsp. Mexican Vanilla
1 tsp. lemon juice
1 tsp cinnamon
1/2 tsp nutmeg
2 tbsp melted butter

Ingredients for apple topping:
4 apples cored, sliced and peeled
4 tbsp butter
sprinkle cinnamon and sugar on top to taste.

Directions:
Mix together in a medium bowl flour, sugar, salt and slightly beaten eggs. Slowly add milk and mix until smooth. Add the rest of the ingredients: baking soda, vanilla, lemon juice, cinnamon, nutmeg and butter. Mix well, and beat on medium speed for 1-2 minutes.

Meanwhile heat a low profile pan on medium heat.
Coat pan with butter and pour in 1/3 cup of batter. Pick up pan and tilt to distribute batter over entire cooking surface to make a 6" diameter circle. Cook till golden on both sides. 

Place finished crepes on a plate and cover with foil to keep warm, or pre-heat oven to 200 degrees and place each crepe in oven to keep warm.

Meanwhile in a saute pan add 4 tbsp butter and apples. sprinkle with cinnamon and sugar. Saute on medium-low for about 8-10 minutes until apples are softened. 

Serve immediately and top with whipped cream and a sprinkle of nutmeg!
Voila! Your are ready to savor the flavors of winter with these delish crepes!
