Whatcha Grilling?

Here is a little look into our grilling fun last night! I had a great time, and invited my family over for some good food! 

I used the Jerk Chicken marinade from this recipe to season the chicken and pepper kabobs. It was delish! I also skewered some beets, fingerling potatoes and tri-color carrots for my veggie kabobs! 

All you have to do for the veggies is peel the carrots and beets (wear gloves while peeling the beets.... unless you want pink hands) and wash and cut into pieces the potatoes. Skewer them and baste them with oil, then add a bit of salt and pepper! Voila. All that is left to do is grill these babies on medium for a few minutes. You want your chicken and peppers to get a bit blackened, and your veggies are done when they are slightly tender. YUM! 

I served these delicacies with white sticky rice and the juicy fresh fruit from my bundle. It was a treat for sure. So if you haven't grilled this summer, get going! It is so worth the effort!
