Marinated Veggie Kabobs

I am a lifetime fan of roasted vegetables, but grilled veggies are even better in my opinion. One of the many benefits of Summer and Fall. Nothing beats the smokey goodness of grilled kabobs. I like a little added flavor to them so I threw together a marinade to soak my vegetables in for an hour or so. It gives it a little extra somethin' somethin'. 



I diced my veggies in large pieces. About 1 1/2 inches thick. They will shrink down a bit during the grilling process.




Fresh herbs make all the difference in flavor.


Just toss together and slide them on your pre-soaked wooden skewers. (Pre-soaking helps the skewers not burn)



I grill mine over medium. I like a little bit of a charred edge to my kabobs, but you could cook them a little less if you desire. Easy peasy! These babies are super delicious, full of flavor and ready to enjoy in no time at all! So, take some time this summer to grill up some goodness for your loved ones.
