I diced my veggies in large pieces. About 1 1/2 inches thick. They will shrink down a bit during the grilling process.
Fresh herbs make all the difference in flavor.
Just toss together and slide them on your pre-soaked wooden skewers. (Pre-soaking helps the skewers not burn)
I grill mine over medium. I like a little bit of a charred edge to my kabobs, but you could cook them a little less if you desire. Easy peasy!
