Fixing up some Springtime Salsa

We were having such beautiful weather the last few days! Until I woke up to the startling sight if a skiff of snow covering my luscious green lawn this morning! Whoa mother nature... What is up with that? Not exactly the May welcome I was hoping for. Not to mention that the batteries in my thermostat died in the night leaving my house a toasty 45 degrees... Ouch. 

This last week my kids and I pretty much hung out in our backyard in the sunshine. I kept dreaming of the fresh garden tomatoes that we would have this summer and it gave me a serious hankering for some salsa! I decided to make it happen. I was going to have some salsa. Today. Hooray! It just so happens that we put roma tomatoes, jalapenos and cilantro along with many other goodies in this weeks produce box for Winder Dairy, so what better to do than make salsa!! I was already working on a yummy carnitas sliders dinner for the evening, and this would go great. I love making fresh salsa. It might be one of my true loves in life. It's SO colorful and rich in flavor. I can't get enough of it. I'm so glad my kids are turning out to be "dippers" if you know what I mean. They love all manner of dips, salsa and hummus.... If you can dip in it, they love it. My 15 month old says at every meal "Deeeep Deeeeep Deeeeeeeep" in the cutest voice when he sees any dip-like substance on the table. Just my kind of people. Good thing they are mine. 

I spent the afternoon hunkered down in my house cooking and baking like a crazy kitchen cruiser. I pounded out the salsa, homemade slider rolls, crock pot carnitas, guacamole, the list goes on. Now, I swear I don't usually cook this intensely all in one day. But today I did. It was fun and exhausting. I was glad to have a few of my buddies from the neighborhood over to enjoy all this goodness! Thanks Elizabeth and Tabitha for spending the evening with us. 

If you are craving some summertime flavors from the garden like I was, get your kitchen cruiser on and cook with me!

Here we go!



Slice up your ripe ruby red romas. 




Give them a small dice. Add them to a medium sized bowl.



Mince your jalapeno peppers. I leave in the seeds and membrane because I like my salsa on the spicy side. Yeah baby!



Give it a toss. Just because it's pretty that way. :)



Slice and dice your peppers of choice. You could add green peppers in the mix too if you like, but I think the red, yellow and orange are sweeter and add a fun flavor to the salsa. 




Pick out three cloves of garlic. Mince those up and toss em in!



Ooooh la la. Its looking pretty so far!



Add fresh juice of 1/2 lemon and 1/2 orange. If you don't have fresh you could add 2-3 tablespoons of the non-fresh variety too. Whichever works.



Now because I don't have a garden bursting at the seams with heirloom tomatoes at the moment I used a can of diced tomatoes. Just smash them up a titch and add them.




You will start out seasoning the salsa with some salt and pepper to taste. After everything has marinated together for about an hour I like to give it one more taste test. Sometimes it needs extra salt at that point.



Wash your cilantro and take off the stems. Then give it a rough chop.



Boom baby! (In the words of my daughter Elena) You are pretty much ready to feast your eyes and your tummy on some darn good Springtime Salsa! 




Give it a good mix and throw it in the fridge for a bit. Just to let all the flavors get all married and delicious. Or pig out immediately. Both are satisfactory in my eyes. Enjoy!
