Grilled Peach Cornbread Shortcake With Caramel Syrup

Oh my lanta. (Can you tell I am from Utah saying such a thing?) These are wicked. Evil. Delicious right down to the core. They are so good that my daughter Elena snuck up to me after dessert and gave me a hug whispering that this was her #1 new favorite dessert ever. Angel food cake with strawberries is her second favorite now. Wowza! So they must be good. Thanks Elena. :)

I was turning through the pages of Country Living Magazine when I stumbled upon a picture of Shortcake. I can't even remember what they were filled with, but it started a longing for my cornmeal shortcake balls I have made in the past. I just couldn't get them out of my head, so here we go! Grilled Peach Cornbread Shortcake was had. And it was had goooood. The great thing about this dessert is it is flippin' easy to make. Some desserts are so complicated, but this takes only a few minutes to mash together the dough for the cakes, and the rest is quick after that! So have at it! Eat some dessert why don't ya?



Don't mind if I do! These are making me drool right now. Literally, this is mean to have to look at at 10:30 PM. Oh man. 
Lets start by preheating the oven to 425 degrees. Then line a baking sheet and set it aside.

In a medium mixing bowl mix together the dry ingredients: flour, cornmeal, baking powder and salt. 


Then add in the butter and mash it with a pastry cutter until it is similar to a coarse crumb texture. 


Next pour in the heavy cream and almond flavoring. Use your hands to work the dough together into a ball. If it seems too dry add a titch more cream. Then we are ready to separate the dough into 8 sections!


Pour 1/4 cup or so granulated sugar onto a place and roll each little ball in the sugar until well coated. 



Place the 8 balls of dough onto a lined baking sheet.


Bake the Shortcake for 15-18 minutes or until golden on top and cooked through. Remove from oven and let cool on a wire rack. Looking tasty!


While the shortcake is cooking, preheat your grill to medium-high. Peel the peaches, half them and remove the core. When you are ready, grill the peaches for about 3=5 minutes on each side, just until they are charred a little. 



These are yummy little devils. I could eat just this for dessert. Oh well, might as well finish what I started!


Whip together your whipping cream, vanilla and sugar to taste. I like mine on the sweet side for this dessert. :)


Now heres the real killer. Home made buttermilk caramel syrup. This stuff can be deadly if allowed to linger in one household for too long. I would seriously eat this every day if it wasn't so naughty.


OK folks. We are ready to put these together. Cut the Shortcake in half. Place some grilled peaches over the bottom layer. Drizzle with homemade buttermilk caramel syrup. Top with a heaping spoonfull of whipped cream and place the top of the shortcake right on top of it all. Boom baby. 


You are ready to seriously enjoy some dessert. It just might become your #1 favorite too, so watch out! Dig it!
