Ultimate Fish Tacos in Laguna Beach!

We have been enjoying our weekend in the beautiful Laguna Beach, CA on vacation! One of my cousins is staying in a fun house here for a few months and invited us to visit. :) It has been so much fun! We are just getting over the exhaustion of Saturday's drive here, and are now almost ready to party at full tilt.... ;) Almost. I might need another night to sleep off the 12 hour drive with two kids in the car, and a grumpy baby night last night, in which my 19 month old woke up 4 times!!! Eek! Let's not even mention the fact that we left at midnight on Friday night to drive straight here. Yay.

I am super glad we are here, and are taking the time to have some family fun! It's much needed, what with my hubby's busy work schedule and my hectic kid-filled days. A little beach therapy is definitely in order. We are lucky to spend this time with my cousin and her adorable family. They are so fun, full of laughter and have been so kind to invite us to hang with them. So here's to a fun week, and a little more sleep tonight. Fingers crossed!

We were treated to some seriously delicious steak fajitas with amazing fresh corn tortillas and all the fixings. They were so so good. Tonight I made one of my husband's favorite meals, Ultimate Fish Tacos. I discovered this recipe from Tyler Florence with the Food Network. He is such an amazing chef. I usually dig anything he makes. I adapted his Ultimate Fish Tacos into MY ultimate tacos. We love them around here. It's kinda a big deal. :)

What really makes these tacos the "ultimate" fish tacos is the toppings. The mango-radish salsa is t0 die for. The pink chili mayo is so perfect over the crunchy warm fried fish. It is an awesome meal. Thanks Tyler, for introducing me to one of our favorites!

It takes a little bit of time to prepare the mango-radish salsa and the pink mayonnaise chipotle sauce, but they are both worth the effort. We feasted. We all had food comas. It was just plain good all around. The kids went for a stroll on the beach afterwords, and who can beat that? Nobody, I say.

If you like fish tacos, and mangoes, this is a dinner straight out of your dreams. So, grab some friends and get cooking!


Ohhh. Can you almost taste the crunchy-fruity-spiciness of it all? Yum.



Having ripe mangoes is a must. They make all the difference! Dice those babies up and toss them in your salsa bowl. 


If you are lucky, you can find a cutie pie to help chop veggies and fruit like I did. Little C was quite the prep expert! I was impressed indeed!


Get your radishes diced too, and don't forget the red onion. Squeeze in your lime juice and add your chopped cilantro.


Season with salt, pepper and 1 tablespoon chili powder. Pour in 1/4 cup olive oil and you are ready to give it a good stir. Taste test.... OK, don't eat the entire bowl before you serve this meal!! I know you want to.


Next for the pink chili mayonnaise. It is so nummy. Simply combine mayo, sour cream, minced chipotle chills, adobo sauce, lemon juice, salt and pepper. 


Mix well and set aside until you are ready to serve.


Thinly slice your lovely head of Napa cabbage. So pretty.


Now that you have all your toppings ready, set up a breading station with three deep dish plates or bowls. One with seasoned flour, one with seasoned egg, and one with seasoned panko bread crumbs. Get ready to fry up some amazing fish!! 


Heat your vegetable oil in a pan to about 375 degrees. You will know that the oil is ready by sprinkling some water in the hot oil and if it crackles it is ready. 


Cook in small batches turning after about 1-2 minutes, until golden brown on both sides. 


I love all the color in this dish. The salsa and cabbage look so great together!



This meal really is so worth the effort. Plate it up and serve to your hungry friends and family!

Have I said MMMMmmmm yet? Cause looking at this all over again has made me hungry, and that seems like it should be impossible! 

My hubby and I joke that some people take pictures of their family.... Well, we take pictures of our food. "OOh! Remember when we ate that? Oh ya! That was the best! How old was our son? Who knows?... But that dinner sure was good...."

I think it goes a little something like that.... Ha ha ha.
