Lemon Pepper Crusted Tilapia Salad with Roasted Red Pepper Vinaigrette Dressing {Lean & Green}

I can't tell you how thrilled I am with my MediFast experience thus far. There has been little to no emotional or physical struggle. I am so amazed at that, because every time I have ever attempted any other healthy eating plan I have experienced some hunger/discomfort and MAJOR cravings for treats and bread. This lack of cravings has been such a lifesaver for me. I am a mother of 2 very busy little souls, and that kinda life is super conducive to poor eating, treat binging and the general ignoring of you own health and balanced diet because you are so distracted-exhausted-overwhelmed to do much else. I am so happy I started this journey towards a healthier life with MediFast. For the first time in a long time I feel like I am headed towards an attainable goal and I know I am going to reach it!!!

Even if you aren't doing something quite so defined and structured, you can still stand to benefit from sticking to {Lean & Green} cooking. It is so good for you nutritionally. My family and I have been absolutely savoring our dinner time together. 

I feel the need to pat myself on the back real quick about my daughter Elena. She is 5 1/2. She was born a picky eater, and many many many evenings have been almost a battle at the dinner table just to get her to eat something. She has grown progressively more daring and willing to eat a wide variety of foods since I began the idea of having "eating adventures" where we try new and interesting foods at dinner. She is more brave every month and will now willingly profess her love of salad.... This is like an utter miracle. I remember the first time I actually forced her to take a bite of salad. It ended with her throwing up at a restaurant due to complete disgust. It's pretty funny when I look back on it. I feel super proud that I have crossed this hurdle with her and she is growing up to be quite the eater. Yay! Proud mommy moment. :)

This week one of the {Lean & Green} meals we enjoyed was this beautifully fresh salad with  crispy golden tilapia. Oooh la la. It was a winner. It came together in less than 30 minutes, and was so satisfying. If you get a chance, try it!
