Omlette Cups, Togarashi Sweet & Spicy Cream Sauce., Bran Muffins and a Tropical Green Smoothie!

Omlette Cups with Togarashi Sweet & Spicy Cream Sauce


This is a new creation for me. I completely loved them! They help you control your portions, and pack it some healthy veggies! They were delicious and moist. Quick and easy too!
Here is what I used:

Omlette Cups

Ingredients:
4 Eggs
2 T. Milk
Salt & Pepper to taste
Crushed Garlic to taste
1 cup chopped Bell Peppers (whatever color you have.)
2/3 cup Tomatoes (I used yellow and red tomatoes.)
1 cup cubed Ham

Directions:
Pre-heat oven to 400 degrees. Butter or Pam a muffin tin.
Fluff eggs, add in seasonings and mix.
Add veggies and ham.
Distribute egg mixture into muffin cups evenly.
Bake for 15-20 minutess; until done.

For the Sweet and Spicy Cream Sauce:
Take 2/3 cup of low fat sour cream. Mix in 1/2 T. Togarashi spice and 1 teaspoon brown sugar and whip into sour cream well. Set aside in refrigerator until ready to top eggs.

I have been a huge fan of Green Smoothies lately! They are a wonderful way to get more green veggies into your diet without eating broccoli for breakfast.... They taste great. You can't even taste the greens in them! Pictured above is one of my smoothies with strawberries and banana with yogurt truvia and spinach. It turned out delish!
Pictured below is my Tropical Fruit Green Smoothie. It is my favorite one right now. So fresh and sweet, you will not be disappointed! This fills you up and makes enough for 2. Whip it up when you don't have time for breakfast. 

In fact this morning I was getting ready for a Pedicure at 8:45 am. I have no idea why we were going so early in the morning, but nonetheless, I needed a speedy breakfast that didn't involve the "Golden Arches...." if you know what I mean. This smoothie was my breakfast savior. I actually paired it with two mini bran muffins, and I was set! I filled up my cup, and took another serving for my cute auntie to enjoy too! ( We were meeting at the Pedi.) I downed mine on the way in the car, and she had hers while getting pampered at the Salon. What a perfect way to spend Saturday morning, right?

Here is what our brunch yesterday looked like. We so enjoyed it. On the bran muffins we used a little butter, and some home made strawberry jam. Mmmmmm.
