Cinnamon-Honey-Vanilla Granola

Laura's Cinnamon*Honey*Vanilla Granola


Ever since I got Vanilla Almond Granola in my Seasonal Harvest Bundle I have had a major craving for it! That granola was gone within a week or so, and I wanted to make some at home.

I poured over many different recipes of other home made granola and didn't fund exactly what I was looking for, soooo..... I just made one up! And guess what? It turned out well! Mike and I have been completely devouring it! If fact it is almost gone! I already have plans to make another batch this week!

I decided to flavor mine with cinnamon honey and vanilla. Three of my favorites!
Here is what all the goodies look like:



Ingredients:
4 1/2 cups rolled oats
1 cup fresh ground whole wheat flour
1/2 cup macadamia nuts rough chopped
1/2 cup sliced almonds
2 tablespoons sunflower seeds
2 tablespoons poppy seeds
2 tablespoons sesame seeds
1/2 cup packed brown sugar
1 teaspoon sea salt
2 teaspoons cinnamon
1/3 cup vegetable oil
1/4 cup honey
2 teaspoons pure vanilla extract
1 1/2 cup dried fruit (I used a mix of craisins and golden raisins.)


Directions:
1-Preheat oven to 350 degrees
2-Mix oats all nuts and seeds, brown sugar, whole wheat flour, salt, and cinnamon in a large bowl.
3- In a separate small bowl add vegetable oil, honey and vanilla; put in microwave to warm up 20 seconds.
4- Pour liquids over the dry ingredients; stir well with a wooden spoon, then finish up the mixing process with clean hands. 
5- Spread granola mixture on a large jelly roll pan and make it even. Roast the granola for about 40 minutes, or until to the desired color of gold. Stop every 10 minutes to stir the granola then place back into oven to continue roasting. 
6- When done baking, let granola cool completely.
7- When cool, mix in dried fruits.
8- Store in an air tight container!

*Just a tip: Be creative! Use the nuts and fruits that you already have in your kitchen and flavor it accordingly. I am planning to do a vanilla coconut granola next week using this granola base, and I am going to add dried mango, cherry and blueberry! Yum!
