Fresh & Quick Stir Fry

This Stir Fry was calling my name last night. Ever since I picked up my Seasonal Harvest Bundle from Muir Fresh Harvest last Tuesday I have been dying to use my Baby Bok Choy. It is so yummy. It is kind of like a cross between Cabbage and Spinach. It is so fresh tasting! 

I grabbed some of my fresh veggies "freshies" I like to call them....
Baby Bok Choy, Edamame, Red Pearl Onions and Red and Green Bell Peppers. Man this dish was packed full of flavor! You can't go wrong with a mish-mosh of "freshies" and some pork with rice I tell ya! I also used some peanuts for a little crunch.

Below is all the freshies getting all caramelized and delicious!


All you have to do is prep your veggies, pre-heat your pan with 2 T. Olive Oil and get started. I stir fried my veggies for about 3-4 minutes. Set them aside and browned my Pork with some Salt, Pepper, and Crushed Roasted Garlic.

After the meat (whatever kind you choose) is seared on the outside add Teri-Yaki sauce of your choosing, and reduce it down until the meat is cooked through, and has a good coating of sauce on the outside. I like to add some Togarashi Sauce or Red Pepper Flakes to mine. I also add a little more crushed garlic to the overall dish while I am finishing it off. Then I add all my freshies back into the large frying pan and meld it all together.



Serve this deliciousness piping hot with some White Short Grain Rice!
My favorite is Bonsai brand rice. Yum!

To the rice I add 3 tablespoons Butter and some Chicken stock!


Do you know why I love Stir-Fry? Because it never tastes the same twice, and you can add any kind of veggies to it and it always tastes great! 
I hope you like it! I know we did. This food was gone it two seconds flat!
