Where do you wish you were cooking today?

I stumbled upon a cooking blog a few days ago, in a long net-surfing session. I wish I remembered the blog name, but I can't recall it. Anyway, this blog would ask the question: "Where do you wish you were cooking today?" This questions was always followed by the photo of a beautiful kitchen scene. Obviously one that they really weren't cooking in, but wished they were! I thought it was a cute idea. :) 

Rather than show you a photo of where I wish I was cooking, I will post a picture of where I am actually cooking, since there really isn't anywhere else in the world I can think of that I would rather be! This is a rare experience... So I am going to gloat a little. :) Enjoy!

Coronado dreamin'.... While cooking up a tasty treat. Quick to whip up No-Bake Haystacks. Yum!
Here is the view right from the kitchen. How could you not enjoy cooking with this incredible view? I was jamming to a little Michael Buble, taking naughty little tastes of melted chocolate and butterscotch chips, and cooking up a semi-homemade Italian meal. It turned out wonderfully!

I loved cooking while watching the amazing sunset. It couldn't have been lovelier. I so wish I could see this more often. I love the sounds of the ocean too. Very relaxing. 





The sun is going down, and the cookies and Italian meal are done! Time to feast with friends! Love me some Coronado. Sigh..... Well, before I serve the meal, I guess I will do some finger lickin' clean up!


No-Bake Haystack Cookies

Ingredients:
1 bag mini marshmallows
1 1/2 bags milk chocolate chips
1 bag butterscotch chips
1 can roasted peanuts
1 can La Choy noodles

Preparation:
In a large microwave safe bowl melt the chocolate chips and butterscotch chips. Stir in all the remaining ingredients. Mix well till all ingredients are evenly coated. 

Scoop a healthy tablespoon (or more) of the cookie mixture on a buttered surface, or on wax paper. Let them set up for at least 30-45 minutes. Eat with delight!

These cookies can be frozen. In fact, I actually like them better when frozen. They are a great and easy treat to throw together for any party!

  1. Oh my gosh those cookies look so good. I am going to go get the ingredients right now to make them. I wish I were cooking in Coronado right now.
