Greek Chicken Fajitas

I really enjoyed this new twist on traditional fajitas! It was fun and different, with a great flavor. I was able to put the entire meal together in under an hour. I love meals that are quick to make when you don't have a lot of time. This was a great use of the fresh veggies that I had in my Seasonal Harvest Bundle. Yummy!

I was going to make your average fajitas tonight but decided to try different seasonings to change up the flavors. I made them with my favorite Greek Seasoning Blend "Cavenders" which is a must have in my spice cupboard. You can find it at most grocery stores, or greek markets. It has such an authentic rich flavor that I can't get enough of!
For a fast and fresh meal that is sure to please, give this a shot! My hubby said to me tonight while he was eating, "Oh my gosh! You can make this any night! This is way better than any fajitas I have had in restaurants!" Woo-hoo! That is what you want to hear at the dinner table!

Greek Chicken Fajitas
Serves 4

Ingredients:

For chicken:
8-10 Chicken tenderloins
2 tablespoons olive oil
Cavender's Greek Seasoning Blend
Salt and pepper to taste
A titch of cayenne pepper
Roasted crushed garlic
2 tablespoons lime juice
1/2 teaspoon chicken bouillon granules

For vegetable stir fry:
1 medium yellow onion, sliced and halved
Handful clipped french green beans, chopped into 2-3 inch long pieces
6 green onions, chopped
2 red peppers, julienned
Cavender's Greek Seasoning Blend to taste
Salt and pepper to taste
Cayenne to taste (depending how spicy you want it.)
1 tablespoon lime juice
2 tablespoons olive oil
Roasted crushed garlic to taste

*I served these fajitas with flour tortillas, white sticky rice, salsa, sour cream and my favorite Guacamole and Baby Heirloom Tomato mix (click HERE for the recipe). It is also great with a splash of fresh lime juice!

Preparation:
In a large saute pan, heat olive oil over medium high heat. Season washed and dried chicken tenderloins with salt, pepper, cayenne, cavender's and garlic. Brown on both sides. Add lime juice and chicken bouillon. cook for 2 minutes more. Remove from heat and set aside on a separate plate. Let them rest for about five minutes and then slice them. 

In the same saute pan (without washing it) add the other olive oil, heat back to medium high heat. Add onions, french green beans, green onions and red peppers. Season with salt, pepper, cavender's, cayenne, lime juice, and roasted garlic mill. Saute until vegetables are slightly soft and getting barely browned. Add sliced chicken and heat on high for approx. two minutes. Just enough time to meld all the flavors together. Remove from heat and serve immediately with your desired fixings! This will be a meal to remember! I hope you love it!
