Mexican Caviar. Warning: {Addictive Substance}

Ahhh. Mexican Caviar. A well known appetizer in our extended family. It came out of the Schaar Family. I have yet to find out the originator of the recipe though. All I know is we love it! I have changed the way I make it over the last several years and think I have now found my favorite way to prepare it. :) I made an entire batch of this stuff to snack on throughout the week and I sure am glad I did. Being a mom is crazy and hectic! Sometimes I realize I never ate, or am out of time and need something good that is quick and at the ready! This "appetizer" salad has been my go to snack in just those kinds of moments many a time this week. 

I think I am cursed in some way because I boarded the perpetual injury train and I can't seem to find a way off it! For a few years now it seems like I have been hurt or sick in some way almost all the time. After having our sweet baby Lincoln (almost 18 months ago) I have had a really bad back that I throw out every few months.... Last week I was finally feeling like my back was getting better from its most recent "throw out" when I decided to fall down our steep staircase holding Lincoln. Thank goodness he was fine (I swear we resort to super-human abilities when we have to protect our young) but I took a serious beating. I have had a lot of pain in both my knees, hips, lower back and ankles. Joy. Just what I needed right? It's crazy, since I feel like this last year has also been a very productive one too. It goes to show you how much you really can do physically, even when your mind would like you to think it can't. Thankfully after three days of resting I am getting past the pain and am getting around better. I even made sweet rolls last night! Go me!

I am so glad I have had the opportunity to create recipes for the winder dairy boxes here in Utah, because it has made it absolutely necessary to cook something fresh and delicious at least twice a week (if not more often) for my family. I think it is so important to eat in the home as a family. Our way of life these days makes it pretty difficult to pull off sometimes! I hope you can find the will and time to cook some home made goodness for your family this summer!

Lets get cooking... Oh wait, the best part of this Mexican Caviar? All you have to do is chop, rinse, pour & mix. There is no heat involved (unless you add the red pepper, then there is some heat). Huzzah for cool easy summer foods that don't make your kitchen even more sauna-ey than it already is. :) Woot woot!

Onward ho with the chopping I say. First the green onions.


Then the green pepper and tomatoes. Num. Everything is so green and red it almost feels like Christmas!



Here are all the lovely food storage items that make this such an easy peasy dish to make! Frozen corn, Rotel tomatoes, black eyed peas, (boom boom pow), chopped green chilies and my best buddy Good Season's Italian Dressing Mix.


Crack those babies open and pour them in!


You're doing good! Isn't this easy? Why yes. Yes it is...


What I love the most about the way I have made this recipe is the fresh herbs and lemon juice. (lemon not pictured...) Ha. poor lemon, I didn't love you enough to even snap a shot of you. :(

I used about 10 large basil leaves and gave them a chop.


Then I sent my hubby out to bring me some fresh chives from the garden. Thank you sir!


Dice them up into bits and you are ready to toss this bowl of aromatic loveliness.



Mix together all the dressing ingredients.


Toss it all together, salt, pepper and cayenne it if you wish and voila. Healthy snacking for an entire week! Ooooh!


Serve Mexican Caviar with Frito's Scoops for the most desirable effect. I promise. It's just not the same without them. :)


Proceed to snacking. Or hey, invite the whole gang over and wow them all with your magical chopping and mixing skills!
