BBQ Chipotle Chicken Salad for the busy crew.

This week has been a whirlwind. I think I haven't stopped to breathe in days. I have been trying to get ready for family pictures this week and it has been a full time job! Lets be honest people, when are all your kids picture ready, let alone your husband and your neglected mommy self? I'd say just about never. I have spent the last 10 days hunting down the perfect outfits that don't necessarily match but that meld well together. I have colored my hair, got my nails done, painted my daughter's nails (which need to be redone already) cut my sons and daughters hair, found the right makeup, waxed, painted my toes, bathed my dog, and who knows what else! We are never this put together and man it's a LOT of work! I am beat and we haven't even taken the photos yet!! I sure hope they turn out after all this crazy running around! I am having the amazing Lindsay Wright take the pictures. Woo-hoo! Lets just say there hasn't been a ton of home cooked meals around these parts... I am SO tired of eating on the go. All I want to do is have a simple meal outside on the deck and watch my sweeties play. I need a simple, no stress day. Lets hope that comes along soon! This salad may be one of the only things I have cooked at home all week. Icky! I didn't even get to eat it with my family (too many errands to run) but it was delicious! I scarfed some down on my way out the door and it was fab. 

I am in love with chipotle peppers in adobo sauce. Just thought you might want to know that little tidbit. It is so versatile, flavorful and spicy! It makes a great additive to a cool summer salad. I could eat this BBQ Chipotle Chicken Salad every day and still love it! It's so quick to throw together. Want to know another little secret? Often times I get lazy and pick up an already cooked rotisserie chicken from the store rather than heating my entire kitchen up cooking. I love how moist they taste and it takes me ZERO time to cook it! If I am going to make a chicken salad, most often this is the chicken I use. It's a good value too. Seriously, 7 dollars for enough chicken to feed my little family 2-3 times sounds good to me! The ones from your local grocer are great, but Costco's are twice the size and the same price. Yeah buddy!

I am on a salad kick. I want it all the time! So here we are again whipping up a fresh salad for dinner. I hope my kids come around to this salad eating business soon or they will go hungry! Ha ha.



Today I broiled the corn and it gives such a good flavor! It only takes 5 minutes. Mmm. 
Preheat the broiler to high.


Shuck the corn and rinse it. Then cut all the Kernels off and lay out on a lined baking sheet. 


Melt 2 tablespoons butter and pour over corn kernels. Toss well, then season generously with salt and pepper.


Pop this sheet of corn in the oven on a high broil for 5 minutes.


Wash and dry one head of romaine lettuce. Slice the lettuce into a thick shredded size.


Mix together the parmesan caesar dressing, minced chipotle peppers and adobo sauce. Oh ya. That's the good stuff!


Remove the meat from the rotisserie chicken and cube. Toss cubed chicken in your choice of BBQ sauce. Set this aside until the rest of your salad is put together.


Prepare the rest of your fixings. In a large bowl add lettuce, cubed avocado, black olives, corn, pinto beans, croutons and feta cheese!


Top with BBQ chicken and diced roma tomatoes. Dress with parmesan chipotle dressing and serve! 


That is one good looking salad I must say. Yum. Yum. Yum.
