Uncle Ed's Authentic Italian Spaghetti {my favorite spaghetti in the world}

This spaghetti is special. It is definately not your everyday run of the mill sauce. My husband's Uncle Ed actually learned this recipe in Italy and was gracious enough to share it with me (and the world). It will knock your socks off! My mother-in-law makes this on special occasions and it has me addicted for life. I can honestly say that this is my favorite meal she makes. It leaves you wanting more every time. She serves this lovely dish with thin spaghetti noodles and amazing parmesan breadsticks. When she makes it, she lets it cook pretty much all day long. Whew!! I almost never have time to cook something for that long, so I have altered the original recipe to be a little more "mommy-of-young-children" friendly. I still let it simmer for at least an hour before serving and I have to say it comes pretty dang close to the incredible dinner she serves. Yay! I am all about saving time, you know....

On a funny note... When my dear husband and I were first married (9 years ago this August)  I was quite the wussy cook. I am ashamed to say that I was literally terrified to touch raw meat. I really can't hardly even believe this about myself to this day. My oh my how things change. It was all in my head of course. Since those young, slightly ignorant (in the kitchen) days I have grown so much. It's amazing how much you can learn if you just decide to do it! *Pat* myself on the back. Ha ha. Well, I remember joining my husbands family for a dinner at his mom's house when she served this to me for the first time. Yes. I still remember this! That is how good this spaghetti is people! I thought to myself, CRAP! I could never live up to this amazing homemaker that my husband is used to! If this is what he thinks I am going to be able to make for him he is dreaming!!! 

Thankfully I can say that I have grown up a bit, and learned to cook. I am glad I can re-create this delicious dinner for him these days and feel pretty good about it! I know I don't quite live up to his supermom mother, but I don't think I ever will. I have accepted this, and am fine with it now. :)

So, if you are looking for one of those WOW dinners to serve when you really want to impress someone this is a great one! I hope it brings as many smiles to the table in your home as it does in ours! Let's get cooking shall we?


Here she is in all her glory!


First get out your handy dandy food processor (if you are lazy like me) and shred your carrots and celery. It really does make things easier doesn't it?




Next heat a large stock pot over medium-high heat and melt your butter, then add olive oil. Toss in a diced yellow onion, carrots and celery and minced garlic. 


Chop your herbs and toss them in too!


Parsley, basil and oregano. Fresh herbs make all the difference!


Let this mixture saute for 7-10 minutes or until onions turn translucent.  Meanwhile, brown the ground beef and Italian sausage. Remove excess grease and set it aside. 



Add San Marzano tomatoes, beef stock, tomato sauce, granulated sugar and sour cream. Mix together well. Season sauce generously with salt and pepper. Add browned beef and Italian sausage.


If you have them, add a few bay leaves for flavor. If you want a little extra spice add a dash of cayenne pepper. 


Your sauce should look a little something like this! Reduce heat to low, and simmer for at least an hour before serving. Always do a taste test before serving to see if your sauce needs extra salt or freshly cracked pepper. 


Here is the finished product! Serve this lovely sauce over your favorite noodles, and enjoy! Garnish with shredded parmesan cheese. Yum!!!
