Have you ever purchased a store-bought granola and thought it tasted like cardboard coated with sugar? Well, that's been my impression of pretty much every granola I have ever bought from a store. It's not a happy thing. Whats really funny is, granola might be the easiest thing on the earth to make homemade (besides scrambled eggs). I mean really... Why do we ever try to buy it at the store? It is pretty cheap to make too. I have been playing around with the basic Cinnamon Almond Granola recipe I created a while back and have made several wonderful varieties! This week I wanted to try making a batch using coconut oil to make it a little healthier. I didn't go full-on "granola" on you and replace the sugar with Agave or anything... Just made a tweak here and there. :)
The results were awesome! A hint of coconut flavor in every golden bite! It was perfectly great with the healthier oil alternative. :) I believe I will use this next time too!
We have been eating this granola for breakfast over Greek yogurt and fresh fruit, and as a crunchy side kick to several salads too! I was a great addition to my {Salad Of The Week} which will make it's debut in the next few days. :)
