

Lately one little trick that works wonders for me is this. When I DO have the time, I prep my veggies. I clean and chop celery and put it in water to keep. I clean, de-seed and chop my peppers. Same goes for onions too. I don't always prep all my quantity of veggies in case a dish I am cooking calls for a different slice, but for omelets and other dishes I love having these prepped veggies ready and waiting. It makes cooking with them that much easier, and I remember that I have them! It is a wonder!
