Apple Pie Today Keeps The Doctor Away!

The wonders of home baked apple pie!

I was inspired to make this pie by my sweet mother, who decided to call me and secretly gloat the fact that she had not one, but two apple pies in the oven! I happened to be lying on the couch grumbling because I feel a cold coming on. I was tired, and getting the sniffles. Not much fun I tell ya! My daughter and I were about to turn on The Little Mermaid to rest together. 

After my phone conversation with mom, the idea of fresh warm apple pie would not leave me! How rude to plant that delicious thought in my head.... Especially when I didn't have it in me to make one to enjoy.

Sometimes when I can't make up my mind wether I want to do something or not, I will ask my 3.5 year old daughter and see what she thinks. I know that sounds silly, but sometimes you just need another opinion, even if that person in tiny. :) Of course Elena's face lit up with joy at the thought of apple pie! Hooray, it was settled then, we are making one of those pies despite my being a little under the weather...  So baking to the beat of Under The Sea it is! Who knows, maybe warm pie is just the ticket to getting me back to my good old self!

The pie was made, and yes, it was worth the small amount of work. I didn't slave over the apple pie filling like you might have guessed. I had a secret weapon. My mom's bottled, ready to pour and use, apple pie filling. She just so happened to send me home with a jar a week or so ago. Yay for mothers and the little goodies they provide. Now, this pie filling is easy to make and bottle, and happens to be wonderfully scrumptious. Fairly healthy too! Apple pie filling is on my to do list for fall bottling, and I will post the recipe for it soon! Stay tuned, and for now, just oogle the perfection of my pie. Yes it is perfectly imperfect, just the way I like it!

I will say good night on that note, but not without consuming a little slice of heaven first. You have my permission to be jealous. ;)
